Food manufacturers face numerous challenges from ever-changing economic, social and environmental conditions. With ingredient costs climbing and global climate change becoming a major issue, food producers must now address environmental concerns, social responsibility and economic viability when shaping their food processing techniques for the future. This module analyses the sustainability issues in food manufacturing including wastage reduction, productivity improvement and efficiency.

Course Objective

The course aims to introduce participants to minimal food processing techniques and novel technologies.

Participants will be able to apply the concept of sustainability in the food industry. Participants will be introduced to appropriate tools and apply these to improve food manufacturing processes in order to eliminate waste, decrease variation, enhance product quality and increase productivity.

Course Outline

By the end of the course, participants will be able to: 
1. Investigate global patterns and trends of food consumption and production
2. Discuss what sustainability means with reference to food
3. Explore how technological advances are used to reduce wastage from the food system
4. Explore how technological advances are used to improve productivity in the food production

1. Impacts of food production to the climate change and environment
2. Trends of food consumption and production
3. Meaning of sustainability
4. Minimal food processing techniques and novel technologies 
5. Appropriate tools to improve food manufacturing processes 
6. Appropriate tools to eliminate waste from food production 
7. Appropriate tools to enhance product quality and increase productivity.

Minimum Requirements

Basic English Proficiency and Full-time Polytechnic Diploma / ITE Technical Diploma / ITE Technical Engineering Diploma / ITE Work-Learn Technical Diploma

• Certificate of Attendance (electronic Certificate will be issued)
A Certificate of Attendance will be awarded to participants who meet at least 75% attendance rate

• Certificate of Completion (electronic Certificate will be issued)
A Certificate of Completion will be awarded to participants who pass the assessment and meet at least 75% attendance rate
