Food Innovation & Resource Centre (FIRC) extends heartfelt gratitude to Enterprise Singapore for the invaluable opportunity to showcase innovative solutions in side-stream valorisation at the FHA–Food & Beverage 2024 event.
The presentation featured a diverse array of upcycled food products creatively crafted from often-overlooked side streams, including ugly and unsold edible vegetables, spent almond nut pulps, chicken carcasses, near-expiry or unsold breads, and spent coffee grounds. These solutions reflect a strong commitment to sustainability, prioritising minimal ingredients and employing straightforward processing techniques to maximise resource efficiency.
Visitors enjoyed an immersive tasting experience, sampling creations such as tantalising veggie pops, nourishing bone broth, and almond pulp cookies that combine indulgence with eco-consciousness.
