Today, consumers look for new experiences in the food they consume. Food technologists have to understand the market environment and unmask consumer insights before they embark on laboratory-based product development activities. This module is about the development of new product concepts.

Course Objective

This course aims to explore the business and technical perspectives for development of new product concepts.

Using the knowledge and skills learnt, participants will be able to identify a product development strategy and design product concepts, taking into consideration consumer needs & preferences through user empathy studies, generation of concepts from the identified needs, and maximise commercial viability through systematic planning of the product development process.

Innovativeness is expected to be infused in the strategy, concepts and plans and will be assessed.

Course Outline

By the end of the course, participants will be able to: 
1. Deduce commercial rationale if the new food product design is feasible to be launched.
2. Analyse market trends to determine direction for conceptualising improvements to the selected products 
3. Highlight insights to user needs for selected commercial products
4. Propose innovative concepts to meet user needs
5. Apply experimental design principles to product formulation
6. Recommend ingredients and suppliers for the product conceptualised

Minimum Requirements

Basic English Proficiency and Full-time Polytechnic Diploma / ITE Technical Diploma / ITE Technical Engineering Diploma / ITE Work-Learn Technical Diploma
