How technology could be a game changer in the war against diabetes

News clip highlighted the various technology that could be used to help fight the war against diabetes. One example is to create low-GI food, and researchers at the Food Innovation & Resource Centre (FIRC) at SP have cooked up low-GI versions of yellow noodles, white bread, ice cream and sweet drinks. Victoria Lim, Food Technologist at SP’s FIRC, shared about the process of recreating low-GI food while retaining the food product’s taste and texture. Dr Ken Lee, Senior Manager at SP’s FIRC, also shared about the Glycaemic Index Speed Test that was developed by the polytechnic. The new test is faster and cheaper at predicting and classifying the GI values of food items.
