Setting the bar with tea

Nanyang Polytechnic held the L’Fiesta Beverage Challenge where students from local polytechnics and university as well as industry experts took part. Two students from Singapore Polytechnic's Diploma in Food Science & Technology (DFST) took part in the Tea Mixology Challenge where they had to produce a mocktail in the preliminary round and a cocktail in the final round. 

DFST Year 3 student, Daphne Tan, took home the third prize. Her mocktail, Lapis, is a gingerbread cinnamon Earl Grey drink which was inspired by the traditional Singapore pastry, Kueh Lapis. As for her cocktail, she made use of her food science knowledge to make a drink called Andromeda. This butterfly pea tea has anthocyanins which will change colour when it is an acidic environment. Hence, with this idea, she introduced lemonade and vodka to make it a refreshing as well as visually pleasing drink.

Another DFST Year 3 student, Joelvin Lim, won the consolation prize.
